Recipe – blueberry ice cream

As much as I love making cakes and and cupcakes, when it comes to eating, nothing beats ice cream. Not even when temperatures outside reaches below -20 degrees Celsius would I say no to a bowl of vanilla ice cream, with some chocolate sauce and fresh berries… delicious!

Today I’m sharing a really quick and yummy blueberry ice cream recipe. It only takes a couple of minutes to prepare and the result is a creamy ice cream with a lovely taste of summer (or berries šŸ˜‰ ).

Simply mix together, by weight, 1 part whipped heavy cream, 1 part sour cream, 1 part confectioner’s sugar and 2 parts mashed blueberries, and pour it into an ice cream machine.

Super easy and totally delicious!

NOTE: since there are no eggs in the batter, it will go hard when completely cooled. Therefore; bring the ice cream to room temperature a few minutes before serving!
